This is the perfect forum to announce that I am going to Bordeaux tomorrow to replace one of our conference speakers on short notice. Apparently, the fact that I speak English qualifies me.
Thus, I shall be out of contact this week. Hooray!
I made two turkey rolls this weekend, with stuffing and mashed potatoes. But I forgot how to make gravy, so it turned out to be a weird white sauce — easily the worst gravy I’ve ever made. The pumpkin pie wasn’t as good as last year either.

Gravy – one tablespoon of flour for every 1/2 cup of fat …. basically – if there are a lot of drippings (and you must use drippings) add flour until it thickens. also add salt and other spices (rosemary goes very well with turkey)…but don’t bother tasting at this time – it will taste like flour and fat and spices. The secret is that you have to cook it awhile. Let it gently boil for about 10-15 minutes then taste…you should have a fine batch of gravy at this point.
As for pie – i’m a much better taster than maker….
